Lemon poppy seed pancakes
Pancakes are a breakfast staple and these lemon poppy seed pancakes are amazing for Sunday brunches and summer mornings. This recipe is super easy and my favorite things to make. I also freeze some of them to have them whenever I want without needing to make an entire batch.
Ingredients
2 cups of flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup sugar
pinch of salt
1/3 poppy seed
2 tbsp lemon zest
2 cups butter milk
2 eggs
2 tbsp butter
If you’d like you can add some vanilla, lemon, and or rose flavoring to the mix.
Directions
In a large bowl combine your dry ingredients: Flour, baking powder, baking soda, sugar, and salt
Next in a small bowl combine: poppy seeds, lemon zest, buttermilk, eggs, and butter. Stir until combines.
Add this to the flour mixture until fully combined and cont over mix.
Heat a skillet, an, or griddle. Add the butter until it is melted and heated then you can spoon your pancakes onto the pan. You will know when to flip them when you see bubbles form around the edges and it begins to turn a golden color.
Flip to the other side until they are fully cooked.
You can serve this with maple syrup, a glaze (the recipe will also be below), or some jams.
Optional glaze
6 table spoons powdered sugar
2 tablespoons lemon juice
This isn’t my usual glaze but this one is super easy to use and you can just mix them in a couple minutes.
